Daniel Weller is the inaugural release in Buffalo Trace Distillery's Daniel Weller Experimental Line - a wheated bourbon program named for Daniel Weller, the ancestor of W.L. Weller who first distilled whiskey in Maryland and Kentucky in the 18th and 19th centuries. The Emmer Wheat Recipe is the program's first chapter: a Kentucky Straight Wheated Bourbon Whiskey aged nearly 12 years, bottled at 94 proof / 47% ABV, built on a mash bill that uses Emmer wheat - an ancient Egyptian wheat varietal rarely seen in modern distilling - in place of the soft red winter wheat that defines the standard Weller bourbon family.
Daniel Weller sits as the boundary-pushing sibling to the standard W.L. Weller lineup. The standard Weller 12 Year, William Larue Weller, and Old Rip Van Winkle programs all run on Buffalo Trace's Mash Bill #2 wheated recipe. Daniel Weller intentionally swaps in Emmer wheat as a one-off experiment to ask what changes when a different ancient grain anchors the recipe instead of modern wheat. The answer, per Buffalo Trace, is a rounder, nuttier wheated bourbon with deeper oak integration after nearly 12 years in the barrel.
On the nose, it shows fresh, nutty aromas layered with orange zest, hazelnut, cinnamon, and caramel. The palate brings a well-rounded blend of bold oak, sweet honey, and orchard fruits, and the finish carries a long, complex oak-forward close with baking spice and lingering leather.
