Ardbeg Fermutation is the February 2022 Committee release single malt, made in 2007 when the distillery's erstwhile boiler, installed in 1968, broke. This meant that the usual 55-day fermentation of six washbacks ran on, becoming more fermutation that fermentation. Exposed to the elements, natural microbes took up residence in the wash and caused a spectacular reaction and created a wild whisky. Aromas of mixed herbs, vibrant zest, smoked orange, grapefruit, peppermint, aniseed and silage fill the nose, complemented by notes of malty biscuits, cardamom, throat lozenges, tar, mint, toffee and cigar ashes throughout the palate.
